Crocos Kozanis Sativus Linneaus contains crocin, the source of its strong coloring property, bitter-crocin, which offers the distinctive smell and taste and essential oils which are responsible for its therapeutic properties.
Saffron is available both in filaments and powder, though the long, deep red filaments are usually preferable to the powder as the last can be easily matured.
Today, the greatest saffron producing country is Greece. Each flower contains only three stigmas. These threads must be picked from each flower by hand, and more than 75,000 of these flowers are needed to produce just one pound of Saffron filaments, making it the world's most precious spice.

...................................................................................................................................................
Protected Designation of Origin (PDO) are geographical indications (GIs) defined in European Union Law to protect the names of regional foods. The law ensures that only products genuinely originating in that region are allowed in commerce as such. The legislation came into force in 1992. The purpose of the law is to protect the reputation of the regional foods and eliminate the unfair competition and misleading of consumers by non-genuine products, which may be of inferior quality or of different flavor.
